WARM AND ZESTY ONION SUMAC SIDE

One of our favourite sides straight from the #FirebrandGrill. This is a real soul warming BBQ side that pairs great with any kind of red or white meat.
Ingredients:
• 3 medium brown onions
• 3 medium red onions
• 2 tablespoons of olive oil
• 2 tablespoons of sumac
• ½ cup of lemon juice
Apart from the onions, mix all ingredients in a small mixing bowl and work into a paste. Set aside and allow to rest.
Charcoal Preparation and Grilling:
Depending on the size of your grill, you will need high heat for best results.

Spread your charcoal evenly across your grill and using long BBQ tongs, place the onions directly over the charcoal. For best results, use direct heat.
Turn each onion once, the outer skin will be nice and charred. This can be tricky as the onions may not want to sit as you wish so a great tip is to skewer the onions and turn bit by bit. We find metal flat skewers do the trick and wont flair up http://bit.ly/FirebrandSkewers
Don’t be afraid to let the skin char right up as this adds to the overall flavour.
FACT: Traditionally, the onions are placed directly on the charcoal which allows for faster results and a more charry texture – but please don’t try this at home! You’re gonna need your fingers for the next BBQ!
After approximately 20 minutes, the internals will soften up and you will know as the ends of the onions will let off some steam. Check to see if ready by poking then with the BBQ tongs and if there is some give then they are ready to take off.
Take onions off and place in a large mixing bowl. Allow to cool for 5-10 minutes until warm. Using your hands, carefully peel each onions taking off the charred skin.

 

The idea is to make sure the onions are still warm to hot by the end of the peel. Use gloves with this step if you wish.
Serving:
Chop each onion into quarters or smaller and mix with the olive oil, sumac and lemon juice. ingredients
Place onto small side plates and drizzle with a little more olive oil and freshly chopped parsley.
