Best Baba Ganoush Ever!

If anybody tells you they hate Eggplant, make them some Baba Ganoush! It’s smokey and creamy and can be pimped up at will! A divine puree come dip that is a staple in many Mediterranean and Middle Eastern cuisines. The boys from Shank Brothers BBQ show us just how easy it is to make and seriously so much better than the store-bought stuff!  

BBQ SET UP

The best thing about this recipe is that you can make during your regular charcoal BBQ cook. You will need an open grilling set up for this one as you’ll be placing the eggplant directly onto the coals.

FUEL SET UP 

For this recipe, the boys have opted to go with the Firebrand Professional Lump Charcoal which will add another layer of smokey goodness to the food without overpowering it. It will also stay hot enough and last through the grilling of the eggplants plus your BBQ cook up.

To light the lump, a chimney charcoal starter will get it lit in a flash. Fill your chimney with lump, place 3 firelighters underneath and let it do its thing! Tip out your charcoal into your BBQ once the lump is white hot.

We used the Firebrand Charcoal Starter with a few firelighters underneath to get the Professional Lump charcoal white hot before pouring into the BBQ. 

THE RECIPE 

3 Medium eggplants (about 900g total) 

3 garlic gloves, minced 

2tbs (30ml) juice from 1 lemon, plus more as desired 

3 tbs (45ml) organic tahini 

1/2 cup (125ml) extra-virgin olive oil, plus more for serving 

1/4 cup chopped fresh parsley leaves

Salt to taste 

METHOD 

Prick eggplants all over with a fork then place eggplants directly onto lit charcoal. Turn occasionally and allow to soften all over. Carefully remove from the charcoal and allow to cool slightly so you can handle. 

Cut open then gently scoop out the flesh and blitz in a food processor with all other ingredients until smooth. 

Tip: A Nutribullet does an amazing job as it emulsifies the eggplant and creates the lightest, fluffiest Baba Ganoush ever! 

Enjoy with char grilled flatbread as a great starter to your BBQ!
